Potato curry - the most favourite among all age groups. It is a simple yet a classic side dish which pairs well with both rice and roti varieties. It can even be used as a stuffing for bread. I have provided here the basic method of preparing potato curry, which even beginners can try with ease.
Potato Curry Recipe
Serves : 3 people
Ingredients
- Potato - 4 medium sized
- Onion - 1 medium sized
- Mustard - 1 tsp
- Urad dal - 1 tsp
- Asafoetida - 2 generous pinches
- Turmeric powder - 1 tsp
- Red chilli powder - 1/2 tsp
- Sambar powder - 2 tsp
- Salt - as required
- Oil - 3 tbsp
Method
- Wash the potatoes well to remove the dirt particles. Cut them into 2 and pressure cook for 2 to 3 whistles by adding little water.
- Cool down, drain the water and peel off the skin.
- Cut potatoes into small cubes and keep aside.
- Chop the onion into fine pieces.
- In a pan, add 1.5 tbsp of oil and once heated, add mustard, urad dal and asafoetida .
- Once dal turns golden brown, add the onions.
- Once onions turn transparent, add salt, turmeric powder, red chilli powder and sambar powder.
- Add the chopped potatoes and mix well. Check for salt and spice at this stage.
- Add the remaining 1.5 tbsp of oil at this stage.
- Keep the flame in low and cook till the curry is roasted. Stir frequently to avoid the curry being burnt at the bottom.
- Serve as a side dish for rice or rotis.
Notes
- Curry leaves and garlic flakes can be used along with onions for added flavour.
- You can skip sambar powder and use red chilli powder alone.
- Fry the potato in low flame so that it is evenly roasted. I always add oil in 2 steps to ensure proper roasting.
