Vegetable Pulao - Easy Pulao Recipe


Vegetable Pulao - Easy to prepare one pot meal with the goodness of vegetables. This is a simple version of vegetable pulao which I regularly make at home. It doesn't involve any grinding and has only simple masala flavours. A simple raita and chips/vadam is sufficient for this yummy rice variety. Else you can pair it up with any spicy gravy. This is an excellent lunch box option which can be done within a short time. I make this frequently for my daughter's lunch box. Vegetable Pulao Recipe

Serves :  3 people


Ingredients

  • Basmati Rice  -  1 cup
  • Chopped Veggies ( I used carrot, beans and peas)  -  1 to 1 1/4 cup
  • Onion  -  1 
  • Garlic  - 1 big pod
  • Ginger  -  a small piece
  • Mint leaves  -  4 to 5
  • Green chilly  -  2 to 3 ( according to the spice level)
  • Salt  -  as required
  • Water  -  1.5 cups

To temper
  • Oil  -  1.5 tbsp
  • Ghee  -  1.5 tbsp
  • Bay leaf  -  2
  • Cloves  -  3
  • Cinnamon stick  -  1

Method

  • Wash rice 2 to 3 times and soak in water for at least 20 to 30 minutes.
  • Thinly slice the onion. Chop the vegetables as required. For pulao, I usually chop them smaller. 
  • Grate ginger and garlic using a grater or roughly crush them using a mortar and pestle. I used my garlic press and roughly crushed them. You can also use ginger garlic paste.
  • In a cooker, add oil and ghee and once it is heated, temper with bay leaf, cloves and cinnamon stick.
  • Once they turn aromatic, add the sliced onion, mint leaves and green chillies and fry till the onion turns translucent. Add salt to speed up the process.
  • Add the crushed ginger-garlic and saute continuously to avoid sticking to the bottom. Fry till the raw smell leaves.
  • Add the chopped vegetables and mix well.
  • Now add the soaked rice after draining water from it. Mix everything well and add water required for cooking the rice. Check for salt at this stage.
  • Close the pressure cooker and once steam comes, pressure cook for 2 whistles or just cook in low flame for 15 minutes after keeping the whistle.
  • Once pressure releases, fluff gently and serve hot with any raita or chips. We had with onion tomato raita and aloo matar gravy.
                                              

Notes


  • I have given 1 : 1.5 proportion for rice and water as I used basmati rice. You can use any variety of rice and adjust the water quantity according to the type of rice.
  • The other vegetables which can be used for this pulao are cauliflower, sweet corn, potato.
  • I have given the quantity of veggies as 1 to 1 1/4 cup. If you prefer more veggies use 1 1/4 cup. Else 1 cup of vegetables will do.
