Vella Dosai Recipe
Makes : 8 - 9 dosas
Ingredients
- Wheat flour - 1 cup
- Rice flour - 1/2 cup
- Jaggery - 1 cup
- Grated coconut - 1/4 cup
- Cardamom powder - a pinch
- Ghee - for making dosas
Method
- Add little water to jaggery in a pan and allow it to melt down by heating in low to medium flame.
- Once melted, strain the syrup to remove impurities.
- Add this syrup with required water to the flour mixture and prepare batter slightly thinner than our regular dosa batter.
- Add grated coconut and cardamom powder to the batter.
- Heat a dosa tawa and pour the batter as we do for the regular dosa and spread it a bit.
- Drizzle a spoon of ghee and cook in low to medium flame. As we are using jaggery, it will turn dark quickly if cooked in high flame.
- Once cooked, flip over the dosa and add more ghee if required.
- Serve hot with little ghee smeared on it. Tastes heavenly.
Notes
- Always cook the dosa in low to medium flame to avoid the dosas getting burnt.
- This dosa should always be served hot.
- The leftover batter can be stored in the refrigerator for a maximum of 1 day, as after that it will become sour.
