Savoury diamond cuts - maida salt biscuits is an easy to prepare snack item.  We prepare both sweet and salt versions of this biscuit. We can have it as a separate snack item or add it as part of the South Indian style Mixture. I shall try and post the sweet version soon.


Savoury diamond cuts Recipe

Makes  :  1.5 cups


Ingredients


  • Maida (all purpose flour)  -  1 cup
  • Butter  -  2 tsp
  • Ajwain(omam) or cumin seed   -  1/2 tsp
  • Salt  -  as required
  • Chilli powder  -  1/2 tsp
  • Oil  -  for frying
  • Asafoetida  -  a generous pinch

    Method

    1. In a wide vessel, add all the ingredients except oil and mix it well with your hands. 
    2. Then add the required water and prepare a stiff dough. Allow the dough to rest for 10 to 15 minutes. 
    3. Heat oil required for frying.
    4. Take a medium sized portion of the dough and roll it thin. Dust with flour if required.
    5. Cut horizontally and then vertically to make diamond or square shapes out of the rolled dough by using a sharp knife/pizza cutter. 
    6. Drop a bit of the dough to check if the oil is hot. 
    7. Take the cut pieces carefully and drop them in oil. Because of maida, the pieces will stick to each other. Take them out carefully with your hands or using a spatula. 
    8. Fry them on both sides till golden brown. Always keep the flame in medium so that it is cooked properly. Do not overcrowd the oil with the pieces.
    9. Once done, drain the oil and store in an air tight container.
    10. It tastes perfect with a cup of coffee or tea.

    Notes


    • While dropping the pieces in oil, even if they get stuck to each other, after frying they will be separated.
    • You can even make this with just wheat flour alone instead of maida.
    • I added cumin seeds as I didn't have ajwain in stock, but personally I suggest to add only ajwain for this as it imparts a nice flavour to this dish.
