Rava Dosai - Soaking Method - Rava Dosai without Maida

                                       This post explains the preparation of a healthy and easy rava dosai without using maida. Usually rava dosai is made instantly using rava, rice flour and maida. I have already posted that version in my blog. I learnt this version of using idli rice and not using maida -  from my sister-in-law. This is healthier as compared to the instant version.

Vella dosa - Instant Wheat dosa with Jaggery

Vella dosai is a very healthy dish made with wheat flour and jaggery. It can be prepared instantly and can satisfy our sudden sweet cravings. This has been my favourite from childhood as it has jaggery in it. In my home, they usually make this to pair up with the regular instant wheat dosa . You can make this as a quick after school snack for kids, as it doesn't require any pre-planning.

Rava Dosa

Rava dosa is an instant dosa variety which is very easy to prepare but requires more cooking time than the regular dosa. I used to follow a different method of preparing this dosa by soaking rava in buttermilk and then adding the remaining ingredients. When I came across this recipe in Vijay TV Venkatesh Bhat's cookery show, it was very easy and simple to make. I followed his recipe for the proportions of the flour and modified to include few other ingredients like ginger, pepper etc. I have tried this many times and it comes out perfectly every time.

Aapam - Aapam Recipe without yeast

Aapam is a traditional kerala dish which is soft and spongy in the centre and has a crispy outer layer. The recipe I have given here does not use yeast. This is the way my mother prepares and I have also followed the same. It comes out perfect both in texture and taste. Since I don't have the aapam pan specifically meant to prepare this, I used my normal iron kadai to prepare it. You can use any pan/kadai with an appropriate lid to prepare this.

Cauliflower Masala Dosa

Cauliflower Masala dosa is a flavorful dosa variety. We usually prepare only potato masala dosa at home. I came across this cauliflower masala dosa recipe in this blog . It was totally new to me and hence wanted to try it. I made few changes to the original recipe and prepared it as below. It turned out to be flavorful with the smell of fennel seeds and cauliflower.

Verum arisi adai - Drumstick leaves adai

Verum arisi adai is a healthy dosa variety prepared with idli rice. This is a healthy and filling breakfast as we add drumstick leaves which is rich in iron. This is my mil's trademark recipe. She makes it so well and i came to know about this variety of dosa only after marriage. The texture of the dosa is in between the regular dosa and adai variety.

Tomato dosa

Tomato dosa is a flavourful dosa with a tangy taste. This dosa tastes best with coconut chutney or jaggery. This dosa batter does not require fermentation and can be prepared instantly.

Wheat dosa

Wheat dosa is an instant version of dosa which is healthy and prepared using wheat and rice flour. It is the easiest dosa variety which can be prepared in a short time as it does not require any soaking or fermentation. This dosa is thin, crisp and loaded with flavours. \

Adai

Adai is a healthy dish made using rice and variety of dals. It is thicker when compared to the regular dosas. It is a filling and healthy choice for breakfast or dinner. Though traditionally it is served with aviyal, we usually love to have with just  idli milagai podi  and jaggery.

Sponge dosa

Sponge dosa is thick and soft unlike the regular thin, crisp dosa. I came across this recipe from padhuskitchen blog. It is very easy to prepare and the addition of fenugreek seeds gives the softness and a nice flavour to the dosa. This is ideal for lunch boxes and travel as it stays soft even after 4 to 5 hours of preparation.

Idli Recipe - How to prepare idli batter

This is the most basic batter recipe which is common in every south indian household. It is such a versatile batter recipe which can be used to prepare idli, dosa, uthappam and kuzhi paniyaram. Having a batter like this saves lots of time and effort in preparing breakfast/dinner. Even though it is a basic recipe, I have recorded here with few tips for beginners.
