Vegetable Pulao - Easy Pulao Recipe

Vegetable Pulao - Easy to prepare one pot meal with the goodness of vegetables. This is a simple version of vegetable pulao which I regularly make at home. It doesn't involve any grinding and has only simple masala flavours. A simple raita and chips/vadam is sufficient for this yummy rice variety. Else you can pair it up with any spicy gravy. This is an excellent lunch box option which can be done within a short time. I make this frequently for my daughter's lunch box. Omam Mor Kuzhambu - Easy Mor Kuzhambu Recipe

Mor Kuzhambu is an easy to prepare kuzhambu variety using yoghurt/curd.  I have already posted the traditional mor kuzhambu recipe using vegetables. But this particular recipe doesn't require any vegetables and has the main flavour from Oman/Ajwain. Also unlike the regular mor kuzhambu, this doesn't require coconut and instead besan/gram flour is added for thickness.

Kothamallai Thogayal - Coriander Leaves Thogayal

Coriander thogayal is an easy to make thogayal variety. When you have a bunch of coriander leaves which is about to get dry, you can use it to make this dish. Even the stalks of the coriander leaves can be used. I have already shared a thogayal recipe made with mint leaves. This is just another variation, but I have added coconut in this.                 

Methi Tomato Rice - Methi Tomato Chawal

Methi tomato rice is yet another easy one pot meal which I learnt from my cousin from whom I learnt the Rava Pongal recipe. I usually make Methi Paratha or Methi Pulao whenever I buy a bunch of methi leaves. When I was casually chatting with my cousin, she suggested me to try this easy to make methi rice with the flavours of tomato.   A simple raita and chips/vadam is sufficient for this yummy rice variety. Channa pulao is another easy one pot meal which is a great lunch box option with the goodness of chickpeas.      I made it with very simple ingredients. You can pair with a simple raita or even a rich gravy.

Onion Tomato Thokku - Easy sidedish for tiffin items

Onion tomato thokku - a versatile, simple and easy to prepare thokku variety which goes perfect as a side dish for any tiffin item. This can also be mixed with plain rice or even used as a sandwich stuffing. By cooking in oil, this stays good for few days when refrigerated and also is a perfect option for travel purposes. You can make this over the weekend and store it for your weekday purposes.                       

Spinach pulao - Palak pulao

Spinach pulao is an easy rice variety which has high nutritional value. Since it is a greeny leaf vegetable, it is a rich source of iron. This pulao is a great lunch box option and is an alternate to the usual dal and paratha which is prepared with spinach.      I made it similar to the mint peas pulao that I regularly make with few variations that I learnt from the mint pulao recipe I saw here . I loved the addition of lemon juice and pav bhaji/garam masala in this pulao.                                                                    

Sorakkai Kootu | Lauki Channa dal Kootu | Bottle gourd kootu - Easy kootu recipes

Kootu is a traditional South Indian side dish served for rice. It is prepared with the goodness of dal and hence goes well with any kuzhambu, rasam and thogayal varieties. I have already shared chow chow kootu and carrot chow chow kootu recipes. This time I have prepared kootu with another healthy vegetable - bottle gourd(lauki). I started using this vegetable very recently only. It has lot of nutritive values and is perfect for summer time because of its water content.                                                  We usually make kootu with moong dal. But I replaced moong dal with channa dal in this recipe and it turned out good.  Also the dal is cooked just soft and not mushy.  We can serve this kootu as a side dish for rice or even mix with hot rice and ghee and feed for kids or serve it as a side dish for roti.   

Brinjal Drumstick Masala - Easy Side Dish Recipe

Brinjal Drumstick Masala is an easy to prepare side dish for mild pulao varieties or can even be mixed with plain rice. I learnt this recipe from my sister-in-law. This is a flavourful dish requiring very less ingredients and short time. The key ingredients required for this masala are fennel seeds and coconut. Both cannot be skipped as they only lend the flavour to the dish. Brinjal and drumstick is always a winning combo in sambar , vathal kuzhambu and this is another dish where you can use both.                                                                    

Mor Kuzhambu

Mor Kuzhambu is an easy to prepare kuzhambu variety using yoghurt/curd. This is a welcome change to the regularly made sambar and other  kuzhambu varieties. It can be prepared in a short period of time and can be served with any spicy curries like potato /raw banana/colocasia fry. We also make paruppu usili as a side dish for this. This is a no onion no garlic recipe and hence usually made on festival days. Though it is an easy recipe, there are few tips and instructions to follow while preparing this. I have given them in the notes section. I learnt this recipe from my periamma who is an expert in cooking traditional dishes.

Paruppu Urundai Kuzhambu

Paruppu urundai kuzhambu is a tangy and spicy traditional kuzhambu variety which is a variation to the regular sambar. This is one of the trademark recipes of my mother-in-law. In this recipe, dals are soaked and ground to a coarse paste and made as balls and cooked in tamarind based gravy. This is a perfect accompaniment for rice and does not require any side dish. There are many variations to this recipe in terms of the ingredients. The recipe given below is the simplest one with minimal ingredients and effort.

Poondu Milagu Kuzhambu - Garlic Pepper Kuzhambu

Poondu Milagu Kuzhambu - Garlic Pepper Kuzhambu is a very flavourful kuzhambu variety which has the goodness of garlic, pepper and curry leaves. My aunty makes this so well. Unlike other kuzhambu varieties this kuzhambu uses freshly ground spice paste and does not require sambar powder. This kuzhambu pairs well with any kootu variety or it can also be had as a side dish for curd rice.

Mint Peas Pulao - Pudina Peas Pulao

Mint peas pulao/ Pudina peas pulao is an easy one pot meal prepared using mint leaves and green peas. This is a simple way to include mint in our diet as we grind the leaves and use it in the rice. This pulao is a healthy variety to pack for kids lunch boxes.

Kadai Paneer

Kadai paneer is an easy to prepare paneer dish which goes well with roti, naan or even mild pulao varieties. There are different methods of preparation for this dish in the food blogs.  I used to prepare this dish in a different fashion earlier but recently came across a simple recipe in vegrecipesofindia . Tomato Peas Pulao is a healthy and easy to prepare one pot meal. I have prepared it by making few changes to the vegetable biriyani recipe. It pairs well with a simple raita and is an ideal choice for lunch box and travel.

Paruppu Rasam - Tomato Rasam

Paruppu rasam also known as tomato rasam is an easy to prepare rasam variety which has the goodness of toor dal. It is the most commonly prepared rasam variety and is a healthy lunch recipe for babies and kids. We can add plain dal with rice and mix this rasam topped with ghee, when giving for babies and kids.
