Channa Pulao Recipe

Serves :  3 people

Ingredients

  • Basmati Rice  -  1 cup
  • Channa  -  1/2 cup
  • Onion  -  1 medium, thinly sliced
  • Salt  -  as required
  • Turmeric powder  -  1/4 tsp
  • Water  -  1.5 cups

To grind
  • Mint  -  1/4 cup ( 15 to 20 small leaves)
  • Green chilly  -  2
  • Ginger  -  a small piece

    To temper
    • Oil  -  1 tbsp
    • Ghee  -  1 tbsp
    • Bay leaf  -  2
    • Cloves  -  3
    • Cinnamon stick  -  1

    Method

    • Wash and soak channa overnight or atleast for 7 to 8 hours.
    • After the soaking time, drain the water from channa and wash it well with fresh water for 2 to 3 times. This is to ensure the removal of the smell that arises from soaking.
    • Add fresh water till immersing level and pressure cook for 8 to 10 whistles with a pinch of salt.
    • While the channa is being cooked, wash rice 2 to 3 times and soak in water for at least 20 to 30 minutes.
    • Thinly slice the onion.
    • Grind green chilly, ginger and mint leaves to a fine paste by adding little water.
    • Once the channa is cooked, keep it aside. Drain the cooked water and keep separately. This can be added finally after adding rice.
    • In the same cooker, add oil and ghee and once it is heated, temper with the bay leaf, cinnamon stick and cloves.
    • Once they turn aromatic, add the sliced onion and fry till it turns translucent. Add salt to speed up the process.
    • Add the ground paste and turmeric powder and mix everything well.
    • Add the cooked channa and the soaked rice after draining water from it.
    • Mix everything well and add water required for cooking the rice. If you have water from the cooked channa, add that and adjust the quantity accordingly. Check for salt.
    • Close the pressure cooker and once steam comes, pressure cook for 2 whistles or just cook in low flame for 15 minutes after keeping the whistle.
    • Once pressure releases, fluff gently and serve hot with any raita or chips. We had with onion tomato raita.

    Notes

    • I have given 1 : 1.5 proportion for rice and water as I used basmati rice. You can use any variety of rice and adjust the water quantity according to the type of rice.

Try this healthy and easy to prepare pulao variety.
