Vazhakkai Fry - Vazhakkai Tawa Fry

This post explains the preparation of an easy and addictive vazhakkai fry which I have been making for the past few years. Frying in a dosa tawa gives the crispness and texture to the vazhakkai.

Vazhakkai Fry - Vazhakkai Tawa Fry

Serves - 3 to 4 people

Ingredients

  • Plantain(raw banana)  - 3 medium sized
  • Turmeric powder - 1/2 tsp
  • Kashmiri chilli powder - 2 tsp
  • Salt - as required
  • Hing - a generous pinch
  • Oil - as required
Method
  1. Wash and peel the skin of the plantain and slice them like given in the below picture to medium slices. It should not be too thick or too thin. The idea is to coat the vegetable in the masala.
  2. In a pressure cooker, add the plantain slices, required salt, turmeric powder, chilli powder and hing. Add water as required for cooking the vegetable.
  3. Pressure cook for 2 whistles.
  4. Once pressure releases, keep aside the cooked vegetable.
  5. Heat a dosa tawa and drizzle some oil on it.
  6. Take the plantain slices one by one and arrange them on the tawa with enough spacing between each.
  7. Drizzle oil around the slices and fry in medium flame.
  8. Flip gently to the other side and cook again until both sides are roasted well.
  9. Always do it medium flame and once it is firm enough remove from the heat as otherwise it will taste bitter.
  10. Serve hot with as a side dish to rice. Tastes great as it is too.😋

Notes

  • I have used kashmiri chilli powder and hence given the quantity accordingly.
  • After pressure cooking, some masala will be left with water in the bottom of the cooker. While frying the slices, if necessary dip the pieces in the masala and place in the tawa.
