Vella dosa - Instant Wheat dosa with Jaggery



Vella dosai is a very healthy dish made with wheat flour and jaggery. It can be prepared instantly and can satisfy our sudden sweet cravings. This has been my favourite from childhood as it has jaggery in it. In my home, they usually make this to pair up with the regular instant wheat dosa. You can make this as a quick after school snack for kids, as it doesn't require any pre-planning.



Vella Dosai Recipe

Makes  :  8 - 9 dosas


Ingredients


  • Wheat flour  -  1 cup
  • Rice flour  -  1/2 cup
  • Jaggery  -  1 cup
  • Grated coconut  -  1/4 cup
  • Cardamom powder  -  a pinch
  • Ghee  -  for making dosas


    Method

    1. Add little water to jaggery in a pan and allow it to melt down by heating in low to medium flame.
    2. Once melted, strain the syrup to remove impurities.
    3. Add this syrup with required water to the flour mixture and prepare batter slightly thinner than our regular dosa batter. 
    4. Add grated coconut and cardamom powder to the batter.
    5. Heat a dosa tawa and pour the batter as we do for the regular dosa and spread it a bit. 
    6. Drizzle a spoon of ghee and cook in low to medium flame. As we are using jaggery, it will turn dark quickly if cooked in high flame.
    7. Once cooked, flip over the dosa and add more ghee if required.
    8. Serve hot with little ghee smeared on it. Tastes heavenly.
                                         

    Notes


    • Always cook the dosa in low to medium flame to avoid the dosas getting burnt.
    • This dosa should always be served hot.
    • The leftover batter can be stored in the refrigerator for a maximum of 1 day, as after that it will become sour.
